Vegan Green Bean Stir Fry

INSPIRATION
I’d been craving Chinese food, and had a pound of fresh green beans on hand that I couldn’t stop thinking about smothered in soy sauce. Thus, my Vegan Green Bean Stir-Fry was born.
INGREDIENTS
2 c. fresh green beans (about a pound)
2 carrots, thinly sliced
2 c. broccoli, chopped small
6 large mushrooms, sliced (or 10 small)
1 cob raw corn, shaved off the cob
2 c. bean sprouts
1 c. water
½ c. soy sauce
1 tsp. mustard flour
2 tsp. garlic powder
2 tsp. onion powder
¼ c. oil
2 c. cooked white rice
STEPS
1) I boiled the green beans until very tender. I usually steam my vegetables to retain as many vitamins and minerals as possible, but I like fresh green beans boiled. I grew up loving those waterlogged canned green beans, and boiling is the best way I know to get a similar effect with the healthier, fresh variety.
2) In a large skillet, I whisked together the water, soy sauce, mustard flour, garlic powder, onion powder and oil – mixing until all the powders were dissolved.
3) With the burner on medium low, I tossed in the broccoli and carrots, letting those simmer for about 10 minutes. Then in went the mushrooms and corn for another 10 minutes or so. Finally, in went the boiled green beans and bean sprouts for another 10 minutes.
PRESENTATION
First a bed of rice, a couple of big scoops of Vegan Green Bean Stir Fry, a drizzle of soy sauce and a dollop of sweet and sour.
RESULT
These were the best fresh green beans I’ve ever had, and all the other vegetables complemented them really well.
TWEAKS
Next time I’ll probably cut off the tips of the bean sprouts. And maybe add a bit of celery and double the mustard flour. Possibly more soy sauce too – I found myself adding quite a bit more to it on my plate. That said, I am a salty girl. Some people may not like as much soy sauce as me. Be your own judge.
